Our latest recipe dishes up a terrific side perfect for any hot summer day. Omitting the vinegar saves calories and shelf life! It's an easy, tasty way to get up a healthy serving of veggies without any heavy dressing!
This pairs extremely well with grilled proteins and won't spoil in the summer heat! Great for tailgates!
2, 10 oz. packages shredded cabbage (I purchase mine at trader joes)
4 Red, Yellow or Orange Peppers, Diced
1 package of persian cucumbers, Chopped (these are the mini cucumbers often found in supermarket--usually about 6 in a pack)
3/4 Cup White or Apple Cider Vinegar
1/4 Cup Olive Oil
1/2 Teaspoon pepper
1 Teaspoon Sea Salt
3 Tablespoons Sugar (or use equivalent of sugar substitute)
Place all veggies in a bowl
Combine dressing ingredients and mix well.
Toss into salad to coat and refrigerate for at least 2 hours
